The Antolović family is known for its award-winning prosciutto in central Istria. Istrian prosciutto is an original Istrian permanent cured meat product that is counted among Croatian autochthonous products.
The recipe for the specific Istrian prosciutto has been preserved by tradition, and the local climate has an important influence on its preparation. It includes salting with pure coarse sea salt, pressing and treating it with a mixture of pepper, garlic and spices, and the treated thighs are dried in a kiln for several months.
